Two Affection Hearts are needed for it to evolve; Eevee will jump three times when it reaches two hearts.
Also, make sure Eevee knows a Fairy-type move.

Hmm that's odd. My Eevee hit two hearts of affection in about 10-15 minutes.

It also needs to have a Fairy move when leveling up... Which means you have to have Charm to make it evolve into Sylveon.

Jynx's base Defense is too low. It's a waste investing in it when it'll still just die to strong physical attacks. You should focus on its Special Attack and Speed, it's two best stats.

This isn't the first time I've trained a Jynx this way.
I've proven Jynx to be quite formidable against physical hard hitters. In fact, back when I had Black 2, during times when I battled online and was getting the shit kicked out of me, Jynx was always the one that held on the longest.
You may or may not have had success with her Defense-wise, but I can truly say Jynx is capable of being a bad bitch.

I tried it this weekend, I kept getting the same kind of pokemons, so I kept trading them back. I think the best pokemon or should I say the most unique one that I got was a Duskull from Venice, Italy.
Usually people trade the basic ones: Fletchling, Scatterbug, Caterpie, etc.

Yes I have done this loads of times. Its a great way of getting rid of clutter in your box if youre searching for a specific nature or ability. Its also a good way of getting pokemon for differnt regions. If you breed two pokemon and they are from different regions you have more chance of getting a shiny.
I ended up with about 7 Lileeps so I traded most of them off and I had a few random things from early on (eg Feltchlinig, Bunelby). So far Ive received quite a few different pokemon a couple of Delibirds, Budew, Scatterbug, Squirtle, Phantump and Pumpkaboo which evolved on arrival. I even got a Japanese Eevee.

I find Wonder Trading to be sort of a really cool mini-game, and also a much easier way for me to trade.
Usually when I trade, I'm not looking for a pokemon, but rather trying to get rid of one. Wonder Trade helps me do that. Over and over and over and over and over... lol
Also, it's probably the quickest way to accumulate PokéMiles.

Timer and Quick Balls are the virtually the equivalent of Master Balls; I say use those as often as possible.
The only time I ever use a Master Ball is when I really don't feel like dealing with any kind of hassle to catch something.
