Because the letter K is louder than the letter than the letter C. It's marketing. Nintendo does it too; remember Koopa? K just "hits harder" than C; my theory is, either it's more attention-grabbing because it's less commonly used than C, or the sound is interpretted more quickly in your mind with a K than with a C, because C sometimes sounds like S, but K always sounds like K. So in short, it's for marketing, for impact.

Koopa is ripped off of the chinese Kuppa which is the name of a dragon that is really just a giant turtle.
Mortal Combat could not be used because that is common. You could not trademark nor copyright the name if it is Mortal Combat because that is in common use and can easily be found in the dictionary. Much the Same as Playskool is spelled with a k and not a ch. Since Kombat is not technically a word, it is copyrightable and since it was the early nineties spelling things wrong was cool as well. As for other things being spelled the same it was more of homage to the title.
