Shinnok fan here. I love his name and I know people roll their eyes at wiki references but in my experience mk's wiki page is pretty good. In their trivia section for Shinnok, it saids this...
"While the name "Shinnok" has no basis in any existing world mythologies, the components of his name may have bases in real world languages. "Shin" could be in reference for the Japanese word for "god" or "spirit" (such as that used in the name of the religion of Shinto ("way of the gods"), while "Nok" is most likely a play on the Latin word "[Nox]" which translates into English as "night", but can also mean "darkness" and, figuratively speaking, death."
Don't know if that's what the devs had in mind, but it's very fitting for him.

Sionnach (pronounced like Shinnok) is Irish for 'fox' but it may not have anything to do with how they came up with the name.

Given his powers over the dead, and him being a god, this isn't too far fetched in my opinion.

In Japanese the kanji for the name "Shin" can mean heart, humility, gentleman... That's so Shinnok xD
