I'm kinda new and was wondering....If Ed Boon is starting new, how would u make the new main character? How would he/she look like and what mover would he/she fight?

If NRS was getting low on ideas for new fighters they could always use some MK mugen creations such as Zenaku, Leviathan, Theizen, Dark, etc as a last resort. It's a great resource to introduce fresh characters from, if needed. Versions of characters are quite vast in MK mugen projects, so they should have temporary places in the franchise and be eliminated from the line-up somewhat quicker than classic fighters. I would expect the ones chosen to have modern designs that give them their own identity and change them from the typical 2D palette swapped imagery.
Make a hermaphroditic character. And not for the lulz, something akin to Slaaneshi champions. Have some balls NRS:

I think since its been about 9 years since we had a mk game with new characters, also that there are around 30 characters, the likelihood of NRS borrowing pallette-swapped mugen characters are about dead to none.
The MK team usually produces fresh new quick sketches when it comes to character designs before they finally decide which ones they prefer, all have some crazy cool concepts that could spur so many different opportunities for the franchise (something I saw from the krypt in MKDA).

Who would I want the new protagonist to be? Well, if it's not Cassie, I'd kinda like to see more of an antihero type. Someone that was evil, that has a motive for helping the good guys, not just in a "our goals are currently aligned" kind of way, but a character with a plan that's not just Raiden's foot soldier.
Kinda goes along with the idea of giving characters and plot more depth and finally getting past the good guys fight the good fight and bad guys do bad things because power and what not. Don't get me wrong, j really enjoyed MK9's story, I just think that in 2014, there's a next level that this game can get to, and I say that knowing full well that MK9's story is already light years ahead of any other fighter out there.
