Anyways, I'd like to see some kind of a twist as well.
Scorpion perhaps?
He defeats the Dragon King or Blaze (or whoever the heck one needs to defeat to become champion these days) and the Gods restore his soul.
He bocomes Hanzo again, and even though he's champion, you just know that at some point, maybe not in this game, maybe not even in the next, you know he's going to somehow end up becoming what he once was.
Just a thought.

Just because one is undead doesn't mean that they can't be a champion. Scorpion's ending in Deception had him aligning himself up with the Elder Gods to take down Onaga, as that of now he's the Champion of the Elder Gods.
Shang Tsung as a champion wouldn't quite make sense, he's evil, and he does betray other villains, but that doesn't mean he's a good guy. He wants to conquer Earthrealm, he has no potential in saving the realm by any means necessary.
And Sub-Zero has not always saved Earthrealm, more like that he's trying to discover the past of his ancestors, help his brother out, get Frost back to her normal state. Yes, he's been a part of trying to save Earthrealm, but usually that's Liu Kang's part, and it mostly says so in his endings.
And just because one is a good guy, that's not really a strong answer to give out, because you're saying that any good guy can be a champion... dir, we know, and how every good guy always gets the girl in the ending, always wins the long lasting fight, always gets their revenge... yeah, why though besides the fact that Sub-Zero is a good guy and he's part of the group that saves Earhtrealm?

I don't like the idea of a new character becoming the MK champion. I mean, think about what happened with Liu Kang. He was never developed into the role of champion, he was thrust into it. That became the major thing for his character and we were just supposed to accept it. I don't want the same thing to happen with a new character.
I think that the new champion of Mortal Kombat should be someone we've seen grow and develop for at least a little while. Someone who we've seen as having more motivations than just being the pure and virtuous hero. We have plenty of Earthrealm people to choose from as of right now, let's not waste all of their potential just so some new character can get screwed over in their first outing.

The problem is that they didn't do much of anything with it other than have him continue to win the tournaments. Because he was created just to be the winner and the stalwart hero, that was all we got.
I don't trust the MK team to not do that again with a newly created character and that is why I have to disagree with all the people claiming we should have a completely new character as the Champion.

The younger Sub Zero would make a fine mk champion. First of all he is now firmly established as one of the good guys after mkda and mkd. He reformed the formerly evil LIn Kuei clan. He personally fought in the mkda and mkd tournaments to prove himself to his allies and to protect the earthrealm.
With his ice powers and Lin Kuei training he is arguably the most powerful earthrealm warrior. Sub Zero is one of the 2 most popular characters along with Scorpion so him becoming champion wouldn't be very controversial.
His story also ties to most major characters in the game. Shang Tsung, Quan Chi, Raiden, Sektor, Cyrax, Smoke, Noob, Kenshi, the Red Dragon, Black dragon, Shinnok, Sareena, Scorpion, and Frost.
