First off, his name is spelled Liu Kang.

Secondly, yes, we know he died in MKDA and was in MKD. However, you have to understand that he was still dead and this his body and soul were separate.

And lastly, yes, I think MKA should be his last game. I don't know about appearing in future MK Konquests though.

I think Liu Kang should be retired for a bit. I must confess, though: Even though I've never found the character that appealing, if in two games time he turns up as a secret fighter to just pummel the crap out of people, it would be a glorious moment that could make me care about the character, again.
