What does canon mean?
"Canon" refers to whether or not a situation or event follows the accepted Mortal Kombat (videogam) plotline.
For instance, the MK Movies are non canon, as the depiction of characters is sometimes far removed from the characters of the game. Shaolin Monks is considered non-canon, because it has some differences between the original game's plot (Liu Kang didn't defeat Goro on Shang Tsung's island, Reptile not serving Shang Tsung, etc).
The intro trailer to MKA is generally considered non-canon, as Ed Boon himself has said that they ignored actual character rivalries so that they could have a big battle scene.
So if everything else is non canon, the main games in the series are. MK1-MKA.
