The classic characters in MKT
Kano, Raiden, Kung Lao and Jax.
While they were nice, nostalgic inclusions, I feel the developers missed too many opportunities with them. MK1 Kano should have had his victory pose from the first game, where he roared, and Raiden should have had his old screams for his torpedo. I think he even could have had his censored fatality from the SNES version as a second one, where he instead reduced his opponent to ashes. Kano's censored heart rip could have been his friendship, where he fails to rip out his victim's heart, instead hitting them hard enough to knock them to the ground. Kano would be in his heart-holding stance, with nothing in his hand, and three exclamations point over his head, and Shao Kahn laughing in the background.
But Jax and Kung Lao were the most crippled ones, so to speak. They both lacked their more unique fatalities (and KL lacked his gibberish from his throw). I think Kung Lao's hat slice and Jax's arm rip, with some editing, could have worked. For Kung Lao's, the opponents's dazed sprite could have been split in two, and for Jax's arm rip, when grabbing his victim's arms, they could have gone into their scared/shocked state (like they did when they saw Kabal's face), then back into their dazed state when Jax ripped off their arms, only they'd stop moving, like they did in MK2, and after pretty much every decapitations in MK3.
I realize I'm no programmer, but would the developers really have been incapable of making these ideas work? It truly seemed pointless to include these two classic versions without their iconic fatalities. At least Kano and Raiden had theirs.
And speaking of classic characters and fatalities, why the hell was the masked Sub-Zero's spine rip censored, anyway? They easily could have had a spine under the victim's head, though it probably wasn't censored over programming issues.

Ever since I first played MKT, I felt they should have added the MK1 or MK2 version of Shang Tsung. Regardless of how much I like Shang's moveset in MK3, he had a clownish attire. Thank god his MK1 looks finally get playable in MK 2011.

I remember when I was little I wanted classic versions of every character that appeared previous to MK3 lol especially Scorpion, Sub-Zero, and Reptile. I was so happy when I found out about the Ultimate Mortal Kombat Trilogy rom but it's so poorly done its almost not even fun. It's cool playing as MK1 reptile, Shang Tsung and all of the others but the actault gameplay was terrible.

I enjoyed Ultimate Mortal Kombat Trilogy a lot, it's what Trilogy should have been with all the versions of the characters up to that point but it could have been done better for sure. So many glitches in that game just make it severely broken. Perfect example MK2 Jade's staff throw can be spam over and over never giving the AI a chance at all. Some of the fatalities are just plain glitches themselves.

You have to keep in mind Midway were on tight schedules giving how Ultimate Mortal Kombat 3 came out a few months after Mortal Kombat 3 and Mortal Kombat Trilogy was also given to different developers like GT Interactive. There was not enough time for the developers to do all of the fatalities especially when you're on a tight schedule.
I've heard various reasons for Classic Sub-Zero's fatality being censored, one of them was being too lazy to include an animation of the spine getting torn out and the other to parody the politicians who said games like Mortal Kombat were encouraging people to kill each other.
I think they were able to bring in the MK 1 versions of Kano and Rayden and MK 2 Jax and Kung Lao because they still had the same actors playing them. You couldn't do Johnny Cage MK 1 or 2 well because Daniel Pesina got fired, MK 1 and 2 Liu Kang, Kitana and Shang Tsung because the actors sued Midway and Sonya MK 1 actor too.

When I read the lawsuit which if you look good and hard via Google you can find it. Elizabeth Maleki, Philip Ahun and Katalin Zamier all sued basically Midway, Nintendo and Sega because of a couple of things.
The first primary reason was, according to them, they were not paid like some of the other actors for their work on Mortal Kombat or Mortal Kombat II when according to evidence submitted by Midway they were.
The other reason was that they said the makers at Midway had promised them that this would both aid them in getting roles in film and would guarantee them roles in films. Midway did somehow prove this. It does kind of show too...why didn't every single actor and actress follow through with this as well. Why was it only these 3? But the transcript of the case is interesting to read.
Going to the classic fighters in Trilogy: I like the all with some exceptions. For all of the classic character they all should have had their Animality that their counterparts shared IMO. Yet if all actors returned to reshoot additional animations why no additional finishers and why are some animations missing?
1. Kano -- I feel since Richard Divizio came back to reshoot some more sprites for Baraka the developers could have done the same with Kano since Richard Divizio did them both. I mean they gave him a new win pose and heart rip animation as well as the spinning knives so why no running sprites?
2. Raiden -- similar to Kano and Jax below. If Carlos came back to reshoot sprites for Raiden running why not for Classic Raiden?
3. JAX -- Just like the above of course. If the actors were brought back to reshoot extra sprites why'd they leave off some others. However I've heard that the Air Sonic Boom was originally intended to be in MKII but since Jax was too powerful they removed it. Has anyone else heard that story?
4. Kung Lao -- Like Jax unless the torpedo was removed from MKII or not or if they brought back Anthony Marquez to shoot additional animations why'd they leave out so much?
The only and last reason why is due to space on the disc?
