I made an awesome CAW on SvR'06 but I don't know how tall he is.

he's pretty tall, make him about 6'6/6'7

Shao Kahn being 8' tall? Hmm, I don't think so...I'm sure he's pretty tall, but not that tall. Goro is 8'2". As for most of the fighters being over 6 ft, well, that's not exactly true. I mean, the Sub-Zero brothers and Scorpion are 6'2". Raiden is 7'. Jax is 6'8". Quan Chi is 6'7" and Johnny Cage is 6 ft tall, but other than that, I don't think any other character is 6' and above unless the other characters are given their heights and weights listed.
I'd say Shao Kahn is 7' tall like Raiden is.

He is at the very least 8 feet tall. Bryan Glynn however, is pretty short apparently.

In the world of Mortal Kombat, it doesn't seem like they fully establish heights based on visual comparison because when you look at these two Kahn is like 3" taller since each pixel in an 18 pixel foot would represent 0.666". I used 8' as the bar of comparison because it was very close to the approximation we're dealing with, and coincidentally an even number of pixels between increment that I could easily do math with based on the standard measurement system. However, if you plop other characters between them, everyone else is about 7', even the MK1 characters who should be designed proportionally to Goro, and we know that's wrong. The only characters close to 7' are Jax, Raiden and Sheeva in the 2D games. Between MKII and MK3, Kahn's sprite didn't change at all, he's the exact same in both, but everyone else is a hair smaller than their MKII counterparts leaving more room for error. It's possible Kahn was not intended to be quite as tall as he appears but he's definitely around 8' because it's obvious he is intended to be much taller than regular characters.
Side note, memory fails, but have I seen listed that Kenshi is 6'10"?

lol, interesting observations...I guess maybe Kahn is at least 7 and a half feet tall or something.
As for Kenshi, he's 6'1" last time I checked.

I saw a video of Bryan Glynn in Shao Kahn's outfit, I thought he looked significantly shorter than most people around him, maybe he was further away or something and I didn't realize.
